Hey there! First off, let me say welcome to the site!
Now, be forewarned that I am a complete Jedi nerd. That is why I am the Jedi mod. I adore Jedi. And I cannot stand to see my beloved Jedi tampered with. xD What follows is going to be me rambling/ranting on some things for you to take into consideration, before I come through and give this an exhaustive overhaul. Now, with that having been said, if I come across as terse or critical, I don't mean to be mean. X) I'm just very, very defensive of my Jedi.
Now, I'm going to begin by ranting about perfect characters. Perfect characters are boring, predictable, flat, and unrealistic. Your char looks pretty darn perfect. Flaws are what define us, they're what make us who we are. Quirks. Nobody is perfect, and your character shouldn't be. He should have struggles. Note that more people are going to want to RP with a deep character, than with a 'perfect' character. And, well, being of the feminine persuasion, I can say that 5'10 isn't really the ideal physical figure. X) Try a little taller. And note that, as previously stated, people are less willing to RP with characters who are dashingly handsome and seemingly perfect. Life is ugly, and the best RP is too.
Moving onward!
So, I see what you're going for with the cryogenically frozen thing, but that whole set up is not going to work for... a lot of reasons.
First of all, the technology hasn't been developed yet, to my knowledge. I will only allow it if you can provide a canon reference.
Secondly, even thirty years ago, the Jedi were very strict. Jedi with love-related affairs either shape up, or they get kicked out. Period. In this century, Jedi do not marry. In fact, suspicion of romance can lead to a separation of the suspected parties. So no, he cannot have a wife, or a lover, unless he left the order at one point.
Also, because he's only been 'awake' for 25 years, he will have the stats of a 25 year old. That's mastery of Shii-Cho, with 3-4 points between 1-2 other forms, excluding Juyo. A char cannot pay points to Juyo unless they have mastered three other forms.
For Force stats, the highest he may have is a 7, with two up to six, and the rest up to four. The specifics will vary by character.
For any exceptionally skilled, or prodigal Jedi, I require for the four Jedi trials, their substance and outcome, to be specifically mentioned.
And lastly, the Sith are just now reforming. As in, three IC months ago. Because of this, there can be no reference to Sith in the bio, and the only major battles within the last fifty years have been related to small scuffles. Nothing of epic scale.
My biggest recommendation to you is that you go through and read the Jedi guidelines, as well as looking through the other Jedi Knights on the active lists. This'll give you an idea as to what level of detail is expected in the bio, and what stats are acceptable.
