He becomes the official senator of Naboo. He has a wife and a kid, and continues to surprise the Gungans and other people who knew him as a fool. Emperor Palpatine ignores Jar Jar's still ,sometimes, clumsy nature, as he convinced the senate to give him emergency war powers in AoTC (Attack of The Clones), which granted Palpatine more political power that allowed him to defy the Republic Constitution.
Around the time of the Kamino Clone Rebellion, clones of Jango trained to take arms against the Empire, Jar Jar retires politics and settles down in Naboo Lake Country with his family. After the Battle of Endor, he was asked to return to politics in the New Republic. He did for one term. He was going to be re-elected, but he chose to retire for good.
Jar Jar later tells Luke and Leia of his experiances with their father.

Found it on Wookiepedia, Starwars.com, and from "That Yoda Guy", the man who helped Lucas create Yoda. Met him at his shop in the Virgin Islands, where he has retired to a nearby condo.

My brother used to have a Jar-Jar plushie that could speak a few phrases, and doubled as an alarm clock. So every morning, I would wake up to this:
"*Yawn* Good morning! Mesa start the day with the tasty morning munchin!"
Or something like that. The point is; it was very annoying.
Years later, my brother got an air rifle and...well...
RIP, Jar-Jar clock.
