I was wondering if you could duel wield in the aspect that one of the two light sabers are a double bladed light saber?

I'm not a mod, but just to clarify, I am assuming you mean wielding a single-bladed lightsaber in your left hand (or whichever) and a double-bladed lightsaber in your right (or whichever)?
In which case I'd say that that sounds extremely unorthodox and there'd have to be a pretty well thought-out reason, imo, for it to even be possible. Consider how Darth Maul wielded his saber in TPM. On the recommendation of the stuntman playing the character, the hilt length was expanded because he, as an expert martial artist, simply could not fight with a weapon like that without having room for both hands on the hilt to perform the maneuvers involved.
So, in the real world, I'd say that using a double-bladed weapon of that length one-handed would pose an immense challenge even for a master fighter. However, in our world, I think you might be able to find a way to justify it - a larger character would likely have less difficulty with it, although they would probably have to simplify a lot of the movements that are involved with wielding a double-bladed saber normally.
Again, not a mod, no real power to say yes or no, but them's my two cents.

If you mean dual-wielding with one or both of the blades being a saberstaff, then Tesok is correct in his assertion. It's a very unorthodox, unwieldy and honestly, impractical thing to do, given the nature of a double bladed lightsaber.
Now dual wielding single-bladed sabers or using a saberstaff is fine, of course. Just not both at the same time, or two of the latter at once.

Sorry I forgot to clarify how it would be used, the double-bladed light saber for the majority of use would only use one blade, the second on stand by. So if a character per say used it they would fight with two blades, using the third to block an attack from behind for instance.

Are you implying that the dual-bladed lightsaber would only have one blade on most of the time, or that it would have both blades on and the second blade would be ignored? Because with the latter, you run into the same issues as if you were just fighting with two blades in one hand, which is that most single-bladed maneuvers would cause the second blade to shred your character. If you mean the former, it seems a little gimmicky to me, and certainly not very practical...There's two more cents for you. One more and you can buy yourself a gumball.

Well, of course it's my opinion and I don't at all want to criticize your character concept in any way, but it seems like it'd only be practical in situations you set up yourself, ie: fighting somebody head-on and bringing in an NPC of your own to come up behind you so you can block his attack. And then you'd have to turn it off again to avoid the difficulties previously discussed.
Again, I have no real power, please take everything I say with several grains of salt, and I don't mean at all to belittle your idea.

No no it fine I've rpied many other places and received criticism, I was just wondering if it would be alright in here.
I take your advice in gratitude but I do think however it would be more useful than in only my pre thought scenarios to use the third blade. As a reference, have you ever seen the Star Wars the Old Republic trailer with the zabrak and master sateel ( if that how her name is spelt). During the battle with Darth Malgus and his master the third blade was used a few times.

Yeah, I'm pretty certain it has to stay limited to the single/single or saberstaff style. Can always ask Jenno for final clarity, but I'm preeeetty certain that's the word. Also, kudos for asking questions. Always helps to ask early

I have one more question actually, I was wondering if my characters father could pass away while he with the jedi and his father leave him a ship, a mining ship to be precise. I'm going to have my character be a bit of a mechanic and all around tinkerer was wondering if he could mad the ship for more combat worth purposes?
